Carrot Oat Muffins

CARROT OAT MUFFINS

3/4 Cup quick cookin oats
1 Cup low fat buttermilk
1 1/4 Cupsunbleached flour
3 Teaspoons baking powder
1/2 Teaspoon salt
1 Egg
3 Tablespoons honey
1/2 Cup of finely shredded carrots
1 Teaspoon of grated orange rind

Combine oats and buttermilk in a mixting bowl and let stand for 15 minutes. Beat egg with honey. Meanwhile, combine flour, baking powder, and salt. Stir egg mixture into the oat mixture. Fold in carrots and orange rind, stirring only enough to moisten all ingredients. Spoon into muffin cups sprayed with a low fat cooking spray. Bake at 400° F for 20 to 25 minutes.
