Tarragon Chicken Cooked BBQ Style, on a George Foreman Grill***Submitted By RG - Wilkes Barre, PA
Directly out of one of the George Foreman grills booklets, this one is quick, easy and of course delicious! I find that the chicken only takes approximately 4 to 5 minutes to cook, but you'll need to get the correct feel of your particular George Foreman grill and cook on it accordingly. You do not want to overcook the chicken, or it could end up tasting dried out.
4 to 6 boneless skinless chicken breasts
1/2 cup olive oil
1 teaspoon dried tarragon
2 tablespoons fresh parsley, chopped
1 teaspoon salt
1/2 teaspoon black pepper
Remove all traces of fat from the chicken. Place each chicken breast between 2 sheets of plastic wrap and flatten the chicken, by pounding it to a uniform thickness (about 1/2 inch). Then combine the remaining ingredients in a large bowl and mix them well. Add the chicken and toss to completely coat it. Cover and refrigerate for at least 2 hours. Grill it on your George Foreman grill.
